MANGO LIME DRESSING
This dressing was inspired by an old friend, who always preferred a sweeter dressing with just a touch of tanginess. I make it with sherry vinegar, which gives it a little unexpected flavor kick; there’s really nothing else like it on the market.

Ingredients
2 medium heads butter lettuce
½ pint sliced fresh strawberries
½ small red onion, thinly sliced
1/3 cup toasted pine nuts
1/3 cup Virginia's Mango Lime Dressing
Poppy seeds
Directions
Wash butter lettuce and dry thoroughly. In a large salad bowl, add all ingredients, except for poppy seeds, toss, and distribute on salad plates.
Sprinkle a pinch or two of poppy seeds on top of each salad before serving.
